Beauty Beet Dip

This is such a great way to enjoy the deliciousness of beets.  I just love how pretty this one looks and it is such a beautiful appetizer to bring to a summer shaker!

  • 4 Cups of Chopped Beets (leave skin on when using organic other wise peal)
  • 1 Cup Of Goat Cheese
  • Hymalayan Salt (optional)
  • 2 Tbsp Olive Oil

Preheat oven to 350 C. Chop up your beets and place onto a baking pan and drizzle the olive oil on top.  Bake beets for about 30 minutes until soft.  Let cool and the add to your blender along with the goat cheese and dash of Himalayan salt.  Blend on low or pulse until smooth consistency. Serve with crackers.

Makes 2 - 4 servings:)

Garden Fresh Bruschetta

This recipe is so simple and absolutely delicious!  Only 5 ingredients and can be made in less than 10 minutes.  Take to a party or serve as an appetizer before dinner!

  • 4 Tomatoes chopped or 2 pints of Cherry Tomatoes
  • 1 Yellow Pepper diced (optional but tasty!)
  • Handful of chopped Basil
  • 4 Tbsp of Extra Virgin Organic Olive Oil
  • Garlic Clove minced
  • Himalayan Salt to taste

Combine all ingredients into a bowl.  If you have time to marinate for 10 - 15 minutes the flavours get even better!  Serve on a sliced organic baguette (or crackers) but if your feeling funky it is delicious if you bake the bread topped with the Bruschetta and sprinkle with goat feta!  I dare you to try these gems, they won't last long!

Serves 4 - 5 :)

***Juicy Tip -   Tomatoes are an excellent source of Vitamin C, E, K, B6 and biotin.  They also contain fibre, magnesium, potassium and copper, so you shouldn't feel guilty at all when enjoying this delight!  Live Juicy!
