This is such a great way to enjoy the deliciousness of beets. I just love how pretty this one looks and it is such a beautiful appetizer to bring to a summer shaker!
- 4 Cups of Chopped Beets (leave skin on when using organic other wise peal)
- 1 Cup Of Goat Cheese
- Hymalayan Salt (optional)
- 2 Tbsp Olive Oil
Preheat oven to 350 C. Chop up your beets and place onto a baking pan and drizzle the olive oil on top. Bake beets for about 30 minutes until soft. Let cool and the add to your blender along with the goat cheese and dash of Himalayan salt. Blend on low or pulse until smooth consistency. Serve with crackers.
