Beauty Beet Dip

This is such a great way to enjoy the deliciousness of beets.  I just love how pretty this one looks and it is such a beautiful appetizer to bring to a summer shaker!

  • 4 Cups of Chopped Beets (leave skin on when using organic other wise peal)
  • 1 Cup Of Goat Cheese
  • Hymalayan Salt (optional)
  • 2 Tbsp Olive Oil

Preheat oven to 350 C. Chop up your beets and place onto a baking pan and drizzle the olive oil on top.  Bake beets for about 30 minutes until soft.  Let cool and the add to your blender along with the goat cheese and dash of Himalayan salt.  Blend on low or pulse until smooth consistency. Serve with crackers.

Makes 2 - 4 servings:)

Veggie Wraps

These bad boys can be great for entertaining or lovely for a light lunch!  Depending on my mood I'll either use Rice Paper Wraps or Collard Greens.

Wraps

  • 5-7 Rice Paper Wraps
  • 1 Head of Lettuce
  • 1 Avocado Sliced
  • 1 Red Pepper Sliced
  • 1 Yellow Pepper Sliced
  • 1 Carrot (shredded or spiralled)
  • Handful of Fresh Basil or Oregano

Avocado Dip

  • 2 Lemons Squeezed
  • 1 Avocado
  • 1 Minced Garlic Clove
  • 1 inch Grated Ginger (or 3 drops of Ginger Essential Oil)
  • 1 Tbsp Tahini 
  • 1/2 Cup filtered water
  • Himalayan Salt (to taste)

Soak the Rice Paper wraps in a shallow pan with warm water until soft.  Then add the Lettuce, Peppers, Carrots & Herbs.  Wrap em up!  Place all ingredients for the dip into a blender or food processor and blend until smooth.

Cut in half and serve with a dollop of dip. 

Serves 4-6 as a snack:)

*** Keep in mind there are many other wonderful veggies you can choose for the wraps!  Red Cabbage, Sprouts, Spinach, Cucumbers or whatever you have kickin' in the fridge!
